Awakening Sun

Yesterday was a sunny day after many, many gray and cloudy days. I decided to take as much as possible out of it, so I woke up earlier so I won’t miss a second of the light!

I was not the only one who enjoys the sun. Pikkunen (“Tiny”) and Lara like to find the sunniest spot of the house and at noon the sun shines right through my window, so Pikkunen just came into my room and started to chill in the warmth of the sunny spot.

Yesterday was such a beautiful day, that it must be a day for grilling (tofu-vegetable skewer, veggie patty and soy wieners – all vegan)! It was also the day for the summer’s first sangria and peas... Yum!

Also, yesterday I decided to go to the downtown and ended up going shopping... again. I made some really nice findings. It has not been a long time when I found myself in a shopping mall last time and left there with a new skirt and a ring. Oopsie!

I tried several outfits yesterday and had a hard time to pick just one! But I ended up putting on my on my new skirt and new, black shirt/lace poncho – I just wanted to wear both of them, although I’m not quite sure does those zippers fit together with the ensemble. Oh well... I also thought about wearing jeans but I don’t have a decent pair of jeans in my closet anymore... I have not been using any kind of pants in a few years! I have a terrible time trying to find the right jeans for me, so that’s why I have passed buying them for such a long time. And I prefer skirts.

Today I saw my dad after a quite a long time. I haven’t had the time to dye my hair yet, even my hair dyes have arrived. But my dad doesn’t mind, he likes my light hair better than my bright red hair. Hah!

There was is a music happening ”Tammerkosken Sillalla” going on at the city centre and there’s a massive tent mounted in the middle of it where Finnish artists perform. The program is free during the noon and day (but at evenings and nights you have to buy tickets to the shows) so we went to see what was happening inside the tent.

We were just in time for there was a show where an entertainment choir Cantarelli was performing. They sang various songs from movies and hits from well-known artists both foreigner (Queen, Abba, etc.) and Finnish. The choir was very entertaining.

We walked to the park and back to the city centre again, down to the marketplace, through a shopping mall and landed in a terrace where I officially opened my terrace season! I ordered sangria, because it’s just my summer drink.

Then we went to get food from Thai restaurant (I ordered fried noodles with chili and basil vegetables and tofu). We just finished eating before the FIFA World Cup, Brazil vs. Chile match started. I had said I don’t watch football but there I was following the game until the very exciting end!

Today was a sunny day also, and I had extremely nice time with my dad. Overall, these two days have been very good!

Midsummer Day

On the day before Midsummer Day, people seemed to go absolutely crazy over what they would buy – so everyone basically emptied the whole grocery stores... Most people seemed to pack their cars as full as possible and even beyond that so they could flee to their summer cottages from the hustle and bustle of the city. We decided to stay at home, because after everyone had gone to their summer cottages, the city was quite peaceful...

The morning started in a very colorful way for the sky seemed like it was on fire! In the morning and noon the sun peeked behind the clowds but went hidden there during the day. I was kind of waiting for sunnier day, but that didn’t really got me down at all!

The Midsummer Day went by nice and easy. We enjoyed the day at home with the cats. Nothing fancy.

Later we made hamburgers and spicy potato wedges. Eating them stretched quite late, though. But we weren’t actually even that tired for the whole night so it didn’t matter.

On Midsummer Days, you just have to stay up as late as possible to see the nightless night.
We were supposed to go and see were there any Midsummer bonfires (“kokko” in Finnish) but the clock was already so late that there must have not been any bonfires anymore...

I hope you all had a great Midsummer Day!

Eating Myself Healthy

Since I turned into a vegetarian back in the summer of 2009, when I was 17-years-old, I didn’t know how to make food at all! I only ate ready-made meals which you just put in the microwave... I lost weight after eating that for so long. But then I learned how to make food and I’ve gotten better and better at it all the time (or so people say). I’m no chef but I can make food when needed – except carnivore food. There was a time when I used frozen vegetables (what a shame!) but since then I’ve learned my lesson and now I use fresh vegetables only, only, only. And after leaving the meat out of my plate and learning to eat so much everything else but meat (and what I couldn’t ever imagine even taste before) I’ve never felt better!

Turning to a vegetarian to lose weight was not my first priority back when I started though, even people thought I was doing it for just so I could lose weight – my priority was the animal rights! Of course I was more than happy to notice the significant impact of vegetarianism on my weight but my reasons were purely ethical. Year after turning vegetarian, I turned vegan but about three years later I turned vegetarian again, but I don’t use eggs and only eat cheese sometimes, which is really all I’m using. I don’t use leather at all, or pearls, or silk, or fur, etc.

I eat vitamins because I can’t consume everything I need because I don’t eat meat at all. I had eaten B12 vitamin for a long time for I had read that it’s what vegans and vegetarians need. But when I last time had a blood test, it showed that the B12 vitamin levels were high so the doctor said that I don’t need to take it. So I left that off, but it was nice to notice that at least some of my vitamins were normal even I don’t eat meat – who needs meat anyway?

Sometimes I’m very worried do I get everything from my diet, when I’m not using even eggs and I still don’t eat meat at all – not white, not red and no, not even fish. And fish contains Omega-3 fatty acids which body and brains need to function normally. But, some time ago I found an olive-avocado-flaxseed seed oil with Omega-3, Omega-6 and Omega-9 and without coming from an animal – fish in this case. That was great! I’ve been trying to use it whenever I can (usually baking savory pastries such as a pizza dough) but it still has its own flavor which does not suit in every dish I make but suits great for salads... The (vegan) margarine I have used for years contains Omega-3 & 6 and I sometimes use it when preparing food and more often when I bake.

I use margarine because it tops butter when it comes to heart health (just Google it). Butter is loaded with saturated fat, which can raise your cholesterol and it can also increase your chance of heart disease. People keep saying that margarines contain trans fat – but, in general, the more solid the margarine, the more trans fat it contains. The margarine I’m using is always soft, and it’s never hard like butter.

Some guidelines for even healthier cooking are using olive or canola oil instead of butter or margarine and you should never use shortening or other fats made from animal sources, such as lard with cooking. I know it’s okay to use margarine on your bread but I never, ever use margarine on my bread (it hasn’t really become a habit of mine) but I top my bread with fresh vegetables and vegan salami instead and sometimes with a slice of cheese (sometimes vegan cheese)...

I know everyone say it’s better to eat five times a day and small portions, but it still seems something I have to learn to be better at. But I try my best to keep my eating pattern toward five times a day. It is too easy to skip breakfast, but I always eat lunch. Then I eat something during the day, then supper. But I don’t really count my meals, which can vary from day to day...

I’ve been trying to find out more information about low-carb diet and Atkins Diet when you’re a vegan – the information seems rather hard to find. But I will continue searching. My goal is to have low-carb days and then normal days when I can eat a little bit of bread, pasta, potatoes, etc. I’m now reading the labels even closely at grocery stores, because I want to know how much everything the product contains. I want to know what I’m eating!

I don’t want to go over the top about eating something, or not eating something but I want to stay as healthy as possible and eating is just one way to help me reach that goal!
